Princess Pie





Princess Pie 

Crust:
  • 1 cup flour
  • 1/2 cup butter, melted
  • 2 Tbs sugar
  • 1/2 cup chopped pecans - optional

Mix and pat in an 8x8 inch pan, bake at 350 degrees for 15-20 minutes, until just beginning to turn golden.  Do not over bake.

Layer two:
  • 8 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 cup whipped topping

Beat together sugar and cream cheese.  Fold in whipped topping.  Spread on cooled crust.

Layer three:
  • 1 small package coconut cream instant pudding
  • 1 1/2 cups whole milk (any milk will do, but whole milk makes pudding so much tastier)

Mix until thickened.  Spread over cream cheese mixture.

Top with remaining tub of whipped topping.

Toast 1 cup coconut.  Sprinkle evenly on dessert.  Refrigerate.

Classic Boston Cream Pie





This pie, with its layers of sponge cake, vanilla pudding, and a slick of sweet dark chocolate glaze, is a classic.

Ingredients:
  • One half recipe Easy Pie Dough, shaped and chilled in a pie plate
  • 1 quart whole milk
  • 1 tablespoon vanilla extract
  • 10 ounces (about 1 1/2 cups) granulated sugar, divided
  • Pinch of salt
  • 1 egg
  • 7 egg yolks
  • 2 ounces (about 1/2 cup) corn starch
  • 5 ounces dark chocolate, chopped (about 1 cup)
  • 4 ounces heavy cream (about 1/2 cup)
  • 2 tablespoons light corn syrup

Instructions:

Adjust oven rack to lower middle position and preheat oven to 425°F. When oven is ready, line chilled pie shell with foil or parchment paper and fill with weights (I reuse dried beans for this), and bake on the lowest rack of the oven for 15 minutes. Remove weights and liner, turn pie, and bake until the bottom crust is a light golden brown, about 10 minutes more. Remove pie shell from oven and allow to cool completely.

In a large saucepan, stir together milk, vanilla, half of sugar, and salt. In a large bowl, whisk together egg and egg yolks. Add starch and remaining sugar and whisk until very pale yellow in color, about 2 minutes. Set aside. Place saucepan with milk mixture over low heat and bring to a simmer, stirring occasionally. When it starts to bubble, remove from the heat. Temper the eggs with the hot liquid in small amounts, whisking constantly with each addition. Once all of the liquid has been poured into the eggs, pour the mixture back into the pot and whisk constantly over low heat until the mixture begins to thicken and bubble. From the point you see the first bubble, whisk for two additional minutes, then pour the custard into the pie shell and press plastic wrap against the top. Allow the custard to cool at room temperature, then chill in the fridge for at least two hours.

When you are ready to serve, placed the chopped chocolate in a bowl. In a medium-sized saucepan, combine the cream and corn syrup and bring to a simmer over medium heat. Once the cream begins to simmer, pour the cream over the chocolate and allow it to sit for 2 minutes. Stir the mixture until the chocolate is smooth. Pour the chocolate glaze over the top of the chilled pie and smooth with an offset spatula, and serve immediately.

Banana Coconut Cream Pie




Banana Coconut Cream Pie

Ingredients:

For the coconut pastry cream:
  • 3/4 cup canned coconut cream
  • 1/2 cup milk
  • 2 egg yolks
  • 1/3 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 tablespoon vanilla extract
  • 2 tablespoons butter

For the flaky pie pastry:
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/3 cup plus 2 tablespoons butter, cold, cubed
  • 2 tablespoons shortening
  • 2 tablespoons to 1/4 cup ice water

  • 2 to 3 bananas, sliced
  • 1 cup heavy cream
  • 1/4 cup confectioners' sugar
  • toasted coconut flakes for topping

Instructions:

1. Make the coconut pastry cream: In a saucepan, bring coconut cream and milk to a boil.

2  In a separate bowl, whisk together yolks, sugar, cornstarch, and vanilla extract.

3  Pour half of the boiling milk over the yolk mixture. Whisk well then return the mixture to saucepan.

4  Continuously whisk the mixture until thickened then add butter.

5  Transfer mixture to a bowl and place a sheet of plastic wrap over the surface. Allow to cool to room temperature then chill in the refrigerator until ready to use.

6  Make the flaky pie pastry: In a large bowl, combine flour and salt and stir to mix. Scatter butter and shortening over the flour mixture. Using a fork or pastry blender, toss flour to coat then cut in butter and shortening until the mixture forms coarse crumbs the size of large peas.

7  Drizzle ice water over the mixture and toss with the pastry blender until the dough is evenly moist and begins to come together in a mass but does not form into a ball.

8  Transfer the dough to a work surface. Form dough into a 6-inch disk. Wrap disk tightly in plastic wrap and refrigerate until well chilled, about 1 hour or overnight.

9  Once chilled well, let the dough sit at room temperature for at least 10 to 15 minutes
to soften.

10  Roll out the disk between 2 sheets of parchment paper (or wax paper) to a circle 2 inches larger in diameter than the tart pan.

11  Press dough into the tart pan. Use your hands or rolling pin to level the dough along the edges of the pan.

12  Place aluminum foil over the dough and gently mold it to the dough in the pan. Add pie weights (dried beans work well). Bake for 20 minutes. Remove from oven and let cool.

13  Assemble the pie: Place a layer of bananas on the bottom of the tart shell. Pour half the pastry cream over the tart shell then top with another layer of sliced bananas. Pour remaining pastry cream and level using a spatula. Refrigerate for at least 1 hour.

14  To finish off the pie, pour heavy cream into an electric mixer and whip on high speed. Gradually add confectioners’ sugar and whip to stiff peaks. Set aside.

15  Scoop whipped cream over the pie and spread using a spatula. Top with toasted coconut flakes. Chill the pie until ready to serve.  It will keep in the refrigerator for up
to 4 days.

Time-saving tip:  If you don’t have time to make pie crust from scratch, make a graham cracker crust instead by mixing together 10 tablespoons graham cracker crumbs, 1/4 cup butter, and 1/4 cup granulated sugar in a bowl.

Frosty Toffee Bits Pie

Ingredients:
  • 1 package (3 ounces) cream cheese, softened
  • 2 tablespoons sugar
  • 1/2 cup half-and-half cream
  • 1 carton (8 ounces) frozen whipped topping, thawed
  • 1 package (8 ounces) milk chocolate English toffee bits, divided
  • 1 graham cracker crust (9 inches)

Instructions:

In a large bowl, beat cream cheese and sugar until smooth. Beat in cream until blended. Fold in whipped topping and 1 cup toffee bits.

Spoon into crust; sprinkle with remaining toffee bits. Cover and freeze overnight. Remove from the freezer 10 minutes before serving.
Yield: 6-8 servings.

Nutritional Facts 1 piece equals 406 calories, 25 g fat (15 g saturated fat), 41 mg cholesterol, 291 mg sodium, 39 g carbohydrate, trace fiber, 2 g protein.

Heavenly Pie ( Lemon Meringue Reversed)

Ingredients:
  • 1 cup sugar
  • 1/4 teaspoon cream of tartar
  • 4 egg whites, beaten till stiff not dry
  • 4 egg yolks, slightly beaten
  • 1/2 cup sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest, grated
  • 1 pint heavy cream, whipped

Instructions:

  1. Sift together 1 cup sugar and 1/4 teaspoon cream of tartar.
  2. In a large grease-free mixing bowl beat the egg whites at a slow steady speed. When they are foamy gradually add the cream of tartar and sugar mixture. When the meringue begins to form soft peaks, increase to a moderate beating speed.
  3. Beat another 5 minutes, until the meringue is thick, but still glossy, and forms peaks when the beaters are lifted.
  4. Line a well greased 9 or 10 inch pie pan with meringue mixture to form a pie crust.
  5. Bake for 1 hour at 225 degrees.
  6. Stir in 1/2 cup sugar to egg yolks with lemon juice and zest, cook in double boiler (or Micro) until very thick about 8-10 minutes.
  7. Cool.
  8. Combine 1/2 whipped cream with Lemon egg mixture and fill meringue shell, chill 24 hours.
  9. Cover with remaining whipped cream.
  10. Serve AWAY!

Old Fashioned Homemade Chocolate Pie

Ingredients:

  • 1-1/4 cup of sugar
  • 1/2 cup of plain flour
  • 1/4 cup of cocoa
  • dash of salt
  • 4 egg yolks
  • 2 cups of milk
  • 1/4 cup of butter
  • 1 tsp of vanilla
  • 1-9" pastry shell baked


Instructions:


  1. Bake pie crust until golden
  2. Combine first 4 ingredients in a sauce pan; set aside.
  3. Combine milk and egg yolks.
  4. Stir milk and egg yolks into mixture; add butter.
  5. Cook over medium heat, and stir constantly until mix thickens and boils.
  6. Remove from heat; stir in vanilla; spoon into pastry shell.

You can put a meringue on top if you want, but this is only optional using the egg whites from eggs used for pie.

Chocolate Lovers Chocolate Mousse Pie

Ingredients:

  • 1 cup graham cracker crumbs
  • 1/3 cup NESTLÉ® TOLL HOUSE® Baking Cocoa
  • 1/4 cup granulated sugar
  • 1/3 cup butter, melted
  • 2 3/4 cups (16 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels, divided
  • 2 cups heavy whipping cream, divided
  • 2 teaspoons powdered sugar
  • 1 teaspoon vanilla extract


Instructions:

COMBINE graham cracker crumbs, cocoa and granulated sugar in 9-inch pie plate. Stir in butter until moistened; press onto bottom and up side of pie plate. 

BAKE for 8 to 10 minutes. Sprinkle 1/2 cup morsels over bottom of hot crust; let stand for 10 minutes or until all morsels are shiny. Spread chocolate over bottom and up side of crust. Cool to room temperature.

MICROWAVE 2 cups morsels and 3/4 cup cream in large, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Cool to room temperature.

BEAT remaining cream, powdered sugar and vanilla extract in chilled small mixer bowl until soft peaks form. Fold 2 cups whipped cream into chocolate mixture. Spoon into crust; swirl top. Garnish with remaining whipped cream. Refrigerate until firm.

MICROWAVE remaining 1/4 cup morsels in heavy-duty plastic bag on HIGH (100%) power for about 30 seconds; knead until smooth. Cut tiny corner from bag; squeeze to drizzle chocolate over pie. Llet stand a few minutes before serving.

COOL WHIP Chocolate Pudding Pie

Ingredients:
  • 1-1/4 cups Oreo Baking Crumbs
  • 1/4 cup butter, melted
  • 1 pkg. (4-serving size) Jell-O Chocolate Instant Pudding
  • 1-1/2 cups cold milk
  • 1-1/2 cups thawed Cool Whip Whipped Topping, divided

Instructions:

MIX baking crumbs and butter in 9-inch pie plate; press onto bottom and up side of pie plate.

BEAT pudding and milk with whisk 2 min. Stir in 1 cup Cool Whip; spoon into crust.

REFRIGERATE 30 min. or until set. Serve topped with remaining Cool Whip.

Key Lime Yogurt Pie

You won’t need the luck o’ the Irish when you’re whipping up this low-cal key lime pie. Thanks to fat-free cream cheese and light yogurt, this no-bake dessert won’t max out your daily calorie intake.


Key Lime Yogurt Pie

Ingredients:
  • 2 tbsp. cold water
  • 1 tbsp. fresh lime juice
  • 1 1/2 tsp. unflavored gelatin
  • 4 oz. fat-free cream cheese, softened
  • 3 containers (6 oz. each) Yoplait Light Thick & Creamy key lime pie yogurt
  • 1/2 c. frozen (thawed) reduced-fat whipped topping
  • 2 tsp. grated lime peel
  • 1 reduced-fat graham cracker crumb crust (6 oz.)

Instructions:

In 1-quart saucepan, mix water and lime juice. Sprinkle gelatin on lime juice mixture; let stand 1 minute. Heat over low heat, stirring constantly, until gelatin is dissolved. Cool slightly, about 2 minutes. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Add yogurt and lime juice mixture; beat on low speed until well blended. Fold in whipped topping and lime peel. Pour into crust. Refrigerate until set, about 2 hours.

Makes 8 servings.

Strawberry Chiffon Pie



Strawberry Chiffon Pie

Ingredients:
  • 1 3/4 cup graham cracker crumbs
  • 1/2 cup butter (1 stick), melted
  • 1/4 cup sugar
  • 2 cups whipping cream
  • 1/4 cup sugar
  • 16 ounces fresh or frozen strawberries, pureed
  • 2 envelopes unflavored gelatin
  • 1/2 cup sweetened condensed milk
  • 2-3 drops red red food color gel or equal

Instructions:

Preheat the oven to 350 degrees if you wish to bake your crumb crust.  Baking helps hold the crust together but is not necessary.

  1. In a 9-inch springform pan, mix the graham cracker crumbs and sugar. Make a well in the center of the crumbs and pour in the melted butter. Using a whisk mix together the crumbs and butter until moistened. Shape the crust with the edge of a cup pressing the crumbs against the bottom and sides of the pan. If you choose, bake the crust for 6 to 8 minutes or until the edges are barely browned. Set aside to cool.
  2. In a mixer, beat the whipping cream until soft peaks form. Add the sugar and continue to beat until stiff peaks form. Set aside.
  3. In a small saucepan over medium heat, mix the pureed fruit and gelatin until dissolved. Remove from heat. Stir in the sweetened condensed milk. Add food coloring, if desired. (Make it darker than you think you should. You will be folding it into the whipped cream therefor lightening the color.) Allow to cool slightly.
  4. Fold the fruit mixture into the whipped cream until smooth using a whisk if necessary.  Pour filling into the crumb crust. Refrigerate until set for at least 45 minutes. (You can speed up the process by putting it in the freezer for 15 to 20 minutes.)
  5. Serve cold with whipped cream and fresh berries for garnish. We drizzled white chocolate dessert sauce over top.

Cream Cheese Variation

Whip only 1 3/4 cup of cream, instead of 2 cups, and add 8 ounces of softened cream cheese. Continue beating until fluffy. Continue with the recipe.

100-Calorie Pumpkin Pie Tartlets


Ingredients:
  • 16 (2 1/2-inch) foil baking cups
  • Nonstick cooking spray
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 2 large egg whites
  • 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
  • 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Fat Free Milk
  • 1 cup fat free whipped topping
  • 12 small gingersnap cookies, broken into 1/4-inch pieces

Instructions:

PREHEAT oven to 350º F. Place baking cups on baking sheet with sides. Spray each cup with cooking spray.

COMBINE sugar, cornstarch, cinnamon, ginger and salt in small bowl. Beat egg whites in large bowl. Stir in pumpkin and sugar mixture. Gradually stir in evaporated milk. Spoon 1/4 to 1/3 cup of mixture into each prepared cup.

BAKE for 25 to 28 minutes or until knife inserted near centers comes out clean. Cool on baking sheet for 20 minutes. Refrigerate for at least 1 hour. Top each with whipped topping and gingersnap crumbs.

Dana's Lemon Cake Pie




Dana's Lemon Cake Pie


Ingredients:
  • 1 9-inch deep dish pie crusts, I use Marie Callender's frozen. No need to defrost. No need to prebake
  • 1 1/2 cups sugar
  • 2 tablespoons butter, melted
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon grated lemon peel, (I usually add more)
  • 6 tablespoons fresh lemon juice, (please use fresh)
  • 3 eggs, separated
  • 1 1/4 cups milk, I use 2%

Instructions:

  1. Put rack on lowest position in oven.
  2. Preheat oven to 375.
  3. In a medium bowl, stir together melted butter and sugar.
  4. Stir in flour, salt, lemon peel and lemon juice.
  5. In a small bowl, beat egg yolks with milk until well blended, stir into lemon mixture.
  6. In another medium sized bowl, beat egg whites with an electric mixer until they hold distinct but moist peaks. Gently fold egg whites into lemon mixture. (Don't mix it too much.).
  7. Pour filling into pie crust.
  8. I always end up with more filling than will fit in the pie crust so I put it in a couple ceramic ramekins and cook it along with the pie.
  9. Bake on the lowest rack of the oven until the top is browned and the center jiggles only slightly when pan is gently shaken (45-55 minutes). If the crust begins to brown excessively, drape it with foil.
  10. Let cool before serving. But it's good warm too!

Vanilla Pecan Pie


Ingredients:
  • 1 refrigerated pie crust, (from 14.1-ounce package)
  • 1 package (8 ounces) cream cheese, softened
  • 3 eggs, divided
  • 3/4 cup sugar, divided
  • 4 teaspoons McCormick® Pure Vanilla Extract, divided
  • 1/2 cup light corn syrup
  • 3 tablespoons butter, melted
  • 1/4 teaspoon salt
  • 2 cups pecan, pieces, toasted

Instructions:

Preheat oven to 350°F. Prepare crust as directed on package for one-crust pie using 9-inch deep dish pie plate. Beat cream cheese, 1 of the eggs, 1/4 cup of the sugar and 2 teaspoons of the vanilla in large bowl with electric mixer on medium speed until well blended and smooth. Spread evenly on bottom of crust. Bake 15 minutes.

Beat remaining 2 eggs and 1/2 cup sugar in large bowl with wire whisk until smooth. Add corn syrup, butter, remaining 2 teaspoons vanilla and salt; stir until well blended. Sprinkle pecans evenly over baked cream cheese layer. Slowly pour corn syrup mixture over nuts.

Bake 35 to 40 minutes or until just set in center. Cool completely on wire rack.

Apple Pie Sandwiches



Apple Pie Sandwiches


Ingredients:
  • 2 cups diced peeled tart apples
  • 1 cup water
  • 1/2 cup plus 1 tablespoon sugar, divided
  • 5 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons lemon juice
  • 12 slices day-old bread
  • 3 eggs
  • 2/3 cup milk
  • 2 teaspoons vanilla extract
  • Confectioners' sugar, optional

Instructions:

In a large saucepan, cook apples and water over medium heat for 10 minutes or until apples are tender. Combine 1/2 cup sugar, cornstarch, cinnamon and nutmeg; stir into apple mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in lemon juice.

Spread six slices of bread with 1/3 cup filling; top with remaining bread. In a shallow bowl, beat the eggs, milk, vanilla and remaining sugar.

Dip sandwiches in egg mixture. Cook on a lightly greased hot griddle until golden brown on both sides. Sprinkle with confectioners' sugar if desired. Yield: 6 servings.

Ingredients:
  • 4 tablespoons (1/2 stick) butter, melted
  • 2 eggs, beaten
  • 1 tablespoon all-purpose flour
  • 3/4 cup sugar
  • 1 (3 1/2–ounce) can shredded sweetened coconut (about 1 cup)
  • 1 cup milk
  • 1 (9-inch) unbaked pie shell

Instructions:

Preheat oven to 350 degrees F.

In a large bowl, combine melted butter, eggs, flour, sugar, coconut, and milk. Pour into pie shell. Bake until firm, about 45 to 60 minutes.

Ingredients:
  • 1 unbaked 9-inch (4-cup volume) deep-dish pie shell *
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 1 cup chopped nuts
  • Sweetened whipped cream or ice cream (optional)

Instructions:

BEAT eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell.

BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream, if desired.

* If using frozen pie shell, use deep-dish style, thawed completely. Bake on baking sheet; increase baking time slightly.

Ingredients:
  • 1 recipe pastry for a 9 inch double crust pie
  • 1/2 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup water
  • 8 Granny Smith apples - peeled, cored and sliced

Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.

Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

Bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes.

Blackberry-Apple Pie

Ingredients:
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into pieces
  • 1 1/2 cups (6 oz.) shredded white Cheddar cheese
  • 1/2 to 3/4 cup ice water
  • 1 large egg, lightly beaten
  • Blackberry-Apple Pie Filling
  • 1 tablespoon sparkling sugar

Instructions:

1. Stir together flour and salt in a large bowl. Cut butter into flour mixture with a pastry blender until mixture resembles small peas. Stir in cheese. Drizzle 1/2 cup ice water over flour mixture, stirring with a fork until dry ingredients are moistened and dough is crumbly but forms a ball when pressed together, adding more ice water, 1 Tbsp. at a time, if necessary (up to 1/4 cup). Divide dough in half. Place each half on a large piece of plastic wrap. Shape each dough half into a flat disk. Wrap each disk in plastic wrap, and chill 2 to 24 hours.

2. Preheat oven to 400°. Place 1 dough disk on a lightly floured surface; sprinkle dough lightly with flour. Roll dough to about 1/4-inch thickness. Starting at 1 edge of dough, wrap dough around rolling pin. Place rolling pin over a 9-inch pie plate, and unroll dough over pie plate. Press dough into pie plate; trim off excess crust along edges. Brush edges of crust lightly with egg; reserve remaining egg. Spoon Blackberry-Apple Pie Filling into crust, mounding filling slightly in center.

3. Roll remaining dough disk to about 1/4-inch thickness on a lightly floured surface. Cut dough into 9 (1-inch-wide) strips. Arrange strips in a lattice design over filling; gently press ends of strips into bottom crust; crimp edge of crust. Brush lattice with reserved egg; sprinkle with sparkling sugar. Place on a baking sheet.

4. Bake at 400° on lower oven rack 45 to 50 minutes. Cover loosely with foil to prevent excessive browning, and bake 25 more minutes or until juices are thick and bubbly. Cool on a wire rack 2 hours.

Ingredients:
  • 1 (9 inch) pie shell
  • 5 cups apples - peeled, cored and sliced
  • 2 tablespoons all-purpose flour
  • 2/3 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 tablespoons butter
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup packed brown sugar
  • 3/4 cup rolled oats
  • 1 teaspoon lemon zest
  • 1/2 cup butter

Instructions:

Preheat oven to 425 degrees F (220 degrees C). Fit pastry shell into pie pan and place in freezer.

To Make Apple Filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.

Remove pie shell from freezer. Place apple mixture in pie shell and dot with 2 tablespoons butter or margarine. Lay a sheet of aluminum foil lightly on top of filling, but do not seal.

Bake in preheated oven for 10 minutes.

While filling is baking, make Streusel Topping: In a medium bowl combine 3/4 cup flour, 1/2 teaspoon cinnamon, brown sugar, oats, and lemon peel. Mix thoroughly, then cut in 1/2 cup butter or margarine until mixture is crumbly. Remove filling from oven and sprinkle streusel on top.

Reduce heat to 375 degrees F (190 degrees C). Bake an additional 30 to 35 minutes, until streusel is browned and apples are tender. Cover loosely with aluminum foil to prevent excess browning.

Ingredients:
  • 2 1/4 cups all-purpose flour
  • 3/4 teaspoon salt
  • 2/3 cup butter-flavored shortening
  • 8 - 10 tablespoons cold water
  • 2/3 cup sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 3 1/2 pounds tart cooking apples (such as Rome Beauty or Granny Smith), peeled, cored, and cut into 1/4-inch-thick slices (10 cups)
  • Crumb Topping

Instructions:

1. Line a 15x10x1-inch baking pan with 18-inch-wide foil, extending the foil up over the edges of the pan; set aside. For dough: In a large bowl, stir together the 2-1/4 cups flour and the salt. Using a pastry blender, cut in shortening until mixture resembles coarse crumbs. Sprinkle 1 tablespoon of the cold water over part of the flour mixture; gently toss with a fork. Push moistened dough to side of bowl. Repeat, using 1 tablespoon cold water at a time, until all of the flour mixture is moistened. Using your fingers, gently knead the dough just until a ball forms.

2. Preheat oven to 375F. On a lightly floured surface, roll dough into a 19x13-inch rectangle. Wrap it around the rolling pin; unroll it into the prepared baking pan. Ease dough into the pan and up the sides, being careful not to stretch it. Trim dough to 1/2 inch beyond edge of pan. Fold dough edge over and flute as desired.

3. In an extra-large bowl, combine sugar, the 1/3 cup flour, and the cinnamon; add apples. Toss lightly until apples are coated. Spoon apple mixture into dough-lined pan; spread evenly. Sprinkle with Crumb Topping (pan will be full).

4. Bake for 40 to 45 minutes or until apples are tender. If necessary to prevent overbrowning, cover top with foil for the last 5 to 10 minutes of baking. Cool slightly in pan on a wire rack.

5. Serve warm or cool completely. Cut into rectangles. Makes 25 servings.

Bake and cool as directed. Cover and let stand at room temperature for up to 24 hours; or chill for up to 3 days. Return to room temperature before serving.

Ingredients:
  • 1cup quick-cooking rolled oats
  • 1cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup butter
  • 1/2 cup pecans

In a large bowl, stir together quick-cooking rolled oats, packed brown sugar, and all-purpose flour. Using a pastry blender, cut in butter until topping mixture resembles coarse crumbs. Stir in chopped pecans.
